Zesty Basil Olive Oil Salad

 

The perfect salad recipe to enjoy on a nice Spring day. Made with dried cranberries, beet slices and crushed garlic


Ingredients:

6 cups wild greens/spring mix
1 tbsp lemon zest
¼ c red onion, slivered
4 beet slices
1 tbsp crushed garlic
2 tbsp. basil olive oil
¼ c dried cranberries
2 tbsp pomegranate balsamic

 

Directions:


In a medium-size skillet on medium heat, add basil olive oil to coat. Add crushed garlic and beets and saute until tender. Take off heat. 

In a large bowl, combine spring mix, lemon zest, slivered red onion, sauteed beet slices, dried cranberries, and pomegranate balsamic. Toss. Salt and pepper to taste.
